Obituary for Roselyn Kathrine Scott (Skarsten)

Roselyn Skarsten Scott passed away February 18, 2021, at the age of 91. She was born March 5, 1929, in Benson township to C.K. and Rose Skarsten during a snowstorm.
Roselyn is lovingly remembered by niece Kay Schmitt (Michael) of Eagan, niece Karla Lapic (Stephan) of San Diego, nephew Roger Skarsten of Germany, niece Sarah Skarsten and sister-in-law Alice Skarsten of Benson, and great-nieces/nephews Lauren Schmitt, Eric Schmitt, Nathaniel Lapic and Katherine Lapic. She also is missed by step-children/grandchildren Troy Scott, Varhonda Smith, Derrick Scott and Renee Mitchell, as well as cherished cousins and dear friends.
She is preceded in death by her husband, Carl Scott, her parents, sister Genevieve Sandberg and brother-in-law Ken, brother Christ Skarsten, mother-in-law Virginia Carter and stepdaughter Michelle Gaut.
Roselyn attended District 54 one-room school through eighth grade and graduated from Benson High School in 1946. She attended Augsburg College for one year, taught at a one-room school in Murdock and completed her bachelor’s degree at the University of Minnesota in 1951. Later, she earned a master’s in education from the University of Arizona.
Roselyn was proud of her Minnesota roots and the opportunities she and her family had through the University of Minnesota Extension. Her father learned improved farming practices, her mother belonged to the homemakers group, and Roselyn and her siblings exhibited Hereford cattle at county and state fairs as 4-H members.
She served as Pine County 4-H agent and Lincoln County home agent. She taught home economics at high schools in Minnesota, Arizona and California and then at Orange Coast County College in Costa Mesa, CA, and Southwest Community College in Los Angeles. She also spent a year in America Samoa teaching home economics.
After retiring, Roselyn worked as a travel agent, which suited her love of travel. In all, she visited 51 countries. Roselyn was a devoted dog owner, attended university elder classes, volunteered at a library and a thrift shop, and enjoyed the Hollywood Bowl, theater and the symphony. She belonged to the Sons of Norway and was an active member of Lutheran churches in Los Angeles and Orange County.
Roselyn married Carl Scott in 1973, and they bought a home in Los Angeles. In 2015, she moved to Costa Mesa, and in August 2020, she relocated to Eagan, MN, to live near her niece.
